The company is BIO certified and the products also have the DOC / PGI. The owners are the children of Mr. Puddu, Paolo, Nina and Francesco.
The processing takes place manually both in the vineyard and in the cellar where there are 7 agricultural workers, a winemaker and an external structure that carries out checks relating to the land and operations in the cellar. The BIO certification body carries out periodic checks on processes and products.
Tradition and innovation
The beginning of the business is closely linked to the will, courage and attachment of the family to their land, which has employed all its forces to create products capable of reflecting the rare beauty of the Oliena territory with their flavors.
The company covers 50 hectares of which 30 are cultivated with vineyards.
Here to dominate is the red Cannonau, the “king of Sardinia”, a grape variety most likely indigenous, already present on the island more than 3000 years ago and for this reason considered the oldest in the Mediterranean. Widespread throughout the region, it has found its natural habitat in the Oliena area.
In the territory of Oliena as early as 1500 AD there is talk of a remarkable wine-growing activity by the Franciscan friars, who, after having founded a church and a convent, had planted a vineyard of over 10,000 vines with an adjoining oenological establishment of which there are imposing ruins. However, viticulture was already present.
Above all Gabriele D’Annunzio, who gave this wine the name that the ancient Greeks gave to a herb similar to opium and with hallucinogenic effects: NEPENTE.
Within this wonderful reality, perched at the foot of the Corrasi Massif, there are also 15 hectares of olive groves of the Nera di Oliena and Bosana varieties, from which the company obtains 1st quality extra virgin olive oils.

Pro Vois is born from a selection of grapes from the oldest vineyards of the Puddu family in Oliena. Splendid Cannonau reserve with hints of Mediterranean scrub herbs surrounding the vineyards, and with notes of ripe fruit and fine spiciness typical of the variety. These organoleptic characteristics allow it to be combined with the most important dishes of typical Sardinian cuisine.

winemaking
At controlled temperature with soft punching down and delestage. Maceration is carried out for about 15-20 days, for an optimal extraction of the anthocyanins and with recovery of the polyphenolic fraction by soft pressing of the marc.
Appearance
Intense ruby red color with garnet tinge.
Perfume
On the nose its bouquet is intense and persistent, with hints of vanilla and cinnamon and a spicy finish, with evident flavors of Mediterranean scrub; a still young fruit balances the harmony of the wine.
Flavor
The gustatory balance benefits from good tannins and moderate acidity, well balanced by a powerful alcohol typical of the Cannonau reserves. Softness and delicacy characterize the general approach of this wine.

After the first phase carried out in the cellar in which the Cannonau must is left in contact with the skins for 12 hours, the wine (transported to Valdobbiadene in special tanks), is clarified, decanted and filtered and is ready to be put into the autoclaves where the base of the selected yeasts was prepared with the addition of sugars and mineral salts to promote their activity.
The fermentation that takes place is very rapid, generally around 15-20 days (even less if the autoclave is equipped with stirrers). The sparkling wine is then passed to another autoclave by filtration in a hyperbaric environment, i.e. in overpressure to avoid carbon dioxide losses.
The sparkling wine is subjected to a low refrigeration temperature which causes the precipitation of tartaric acid, therefore it is again filtered always in conditions of constant temperature and hyperbaric environment, and always in this way it is bottled and corked.

The grapes are placed gently in a soft press and pressed with great care. Only the first flower must is extracted up to 50%. Cold decanted, then it is tapped and sent to fermentation which takes place at a temperature of 17/18 ° C. The wine ages for 6 months together with its fine lees with periodic battonage.
